This is the biggest risk. The thermal printer and barcode scanner drivers are proprietary. If you root the device and flash a custom ROM (like LineageOS), you will almost certainly lose the ability to print receipts or use the scanner buttons correctly. The software that binds the hardware triggers to the print API is part of the Sunmi system partition.
